Next year we plan on staying in a two bedroom for the first few nights.
A few days later, we are planning on staying in a studio for the remainder of the trip.

Does this mean that at the 11 month mark I can only book the two bedroom and I won't be able to book the studio at that time.

I will have to wait a few days till I can book the studio.

Correct. You have to wait until the window opens for the dates of your stay in the studio.

And remember that we can only book 7 nights per reservation at a time when you get ready for longer stays.

If both of your stays are at your home resort you still have the 11 month booking option.
Any booking at a non home resort 7 month window rules apply.
