Baking for diabetics??

Hi there, does anyone have any recipes for baked goodies that are okay for diabetics??

Diabetics not only have to watch their sugars but they also have to watch their carbohydrates. With that said angle food cake and pound cake are a good choice for a diabetic. We like it with strawberries or raspberries. You can even top it with lite cool whip.

You can also substitute the oil with applesauce to cut down on the fats. I think you can also substitute it for the shortening but you have to lessen some of the liquids. It may change the texture a bit though.
 
I came across a recipe on the Weight Watchers web site that sounds good. It's for Pumpkin Angel food cake.

1 box Angel food cake
1 15oz can of pumpkin
3/4 c water
1 T. vanilla
1 T. cinnamon

Mix all ingredients and bake at 350 for 35-40mins.

It only has 2 Weight Watchers points per slice. It sounds really good, I'm going to make it this weekend.
