Any good coconut cake recipes??

    I was thinking of making a coconut cake for dessert on Thanksgiving. I've never made one before. Any one have a favorite recipe?? Tips for success. Do I use the Bakers shredded coconut that is in the supermarket aisle?? TIA

    do the Paula Deen cake that sits in the fridge for 3 days OMG people who do not like coconut ask me for that cake . Dang I loaned my Lady and Sons cookbook out and I dont make it enough to tell you it without missing something.

    I bake a Duncan Hines yellow cake, 2 round cake pans.

    Then spread this coconut filling:

    1 cup sugar
    3 Tbsp. cornstarch
    1 tsp. almond or vanilla extract (I like almond)
    2 cups cocunut flakes (I use the bagged kind)
    1 cup milk
    3 Tbsp. butter
    pinch of salt

    Mix sugar with cornstarch in saucepan. Add salt and milk and heat to dissolve. Add coconut and cook until thick, stirring. Add butter and vanilla or almond and cool slightly. Spread on cooled layers.


    Soooooo good if you are a coconut lover.

    I add almond and chocolate frosting for an "Almond Joy" cake. :goodvibes

    My mom makes the best coconut cake.
    She makes it in a 9x13.
    She tops it with the shredded coconut that you find in the freezer section (thawed out).

    Here's her recipe:

    Coconut Cake

    1 box yellow cake mix
    1 pack Dream Whip (optional - this can be hard to find - this dry cream mix just makes cake even creamier)
    1 can eagle brand milk
    1 can cream of coconut
    1 large container cool whip
    1 bag flaked coconut

    Mix cake mix as directed and add dream whip to mix. Bake cake according to directions. Remove from oven and punch holes all through the cake.
    Mix the eagle brand milk and the cream of coconut and pour over cake - making sure it gets into the holes. Cool. Top with cool whip and then with flaked coconut.

    Thanks so much. I'm thinking a coconut cake would look like a big snowball and be perfect for the holidays. Do you think it would taste good if I toasted the coconut??

    For something a bit different but utterly delicious, my mom makes "Sour Cream Coconut Cake" every Xmas (just for me :)).

    This isn't her recipe but it's very like it.

    Sour Cream Coconut Cake:


    Ingredients:
    1 cake mix (mom uses a White cake mix usually but yellow or butter will work, too)
    A bit of almond extract
    2 cups granulated sugar
    2 cups sour cream
    1 package (12 ounces) frozen coconut, thawed
    1 1/2 cups whipped topping
    Preparation:
    Directions for coconut cake
    Prepare cake mix according to directions, adding dash of almond flavoring, baking two 8-inch layers. Cool completely and split each layer horizontally.
    Combine sugar, sour cream, and coconut; blend well and chill. Reserve 1 cup sour cream for coconut cake frosting and spread remaining sour cream mixture between layers. Combine reserved 1 cup sour cream mixture with the 1 1/2 cups whipped topping; blend until smooth. Spread over top and on sides of coconut cake. Keep sour cream coconut cake in an airtight container and store in refrigerator.

    Thanks everyone. There were 3 or 4 verizons of Paula's coconut cake on the Food Network site and I didn't see the 3 day mention. Coconut cake for some reason seems intimidating to me. I'm a really good baker ~ wedding cakes, chocloate layer cakes, cheesecakes, red velvet etc.. no problem but coconut cake I've not tried yet and I'm a little nervous.
