First question is what cruise?

Castaway Cay Cabana's .

But Palo Brunch and Remy are worth booking early and anything with dolphins on port adventures.

Spa slots before formal night are popular.

I can't guess as to what might book up, but mine took probably less than 10 minutes to complete.

Do you book at 12 midnight Eastern time on the 105th day out, or is it 3am (12 Pacific?)

The online check in and excursion window open at midnight Eastern time. Whatever time that is where you are.

And the windows open based on your Castaway Club level:

Concierge/Platinum CC member - 120 days out
Gold CC member - 105 days out
Silver CC member - 90 days out
First time cruisers - 75 days out.
