I'm just the opposite of the OP; we always book a sit down meal in the evening for us. My park commando days are over with.

My five favorites if wanted to sit down and enjoy a meal are below and not in any order.

Narcoossee's
Flying Fish
Monsieur Paul
Jiko
California Grill

I personally enjoy the signature restaurants for the ambiance, the food and the relaxed feel I get when dining there. I usually make them at the end of our evening around 7 or 8. I myself just don't need to run from rope drop to park closure non stop. I know that some love to do this and sitting down for a signature may not be something that works. But for one night, it may be a good option.

We are by no means park commandos ((absolutely nothing written indicates that?? what an assumption to make)), we don't do rope drop and we often go a day without even riding anything. We simply don't like to to pre-schedule our vacations month in advance and find ourselves running to meet reservations daily so we only make a few then wing it, mostly spending our evenings at TOWL.

We usually just have 2 ADRs. We usually book a breakfast and a dinner.

But, my must-do? Garden Grill. Always!

It depends on the meal. We've been to Tusker House for breakfast and 'Ohana for dinner almost every trip. Unfortunately we are doing neither this trip as we are opting for trying restaurants we have never been to. Kona for breakfast, Raglan Road for lunch, and The Wave for dinner.
