It weighs everything in grams and then maintains a nutritional data base based on the fact that every potato /banana/apple etc has the same percentage of carb. For instance, every banana is about 21% carbohydrate. So if you weigh that banana in grams and multiply by .21, you get a precise carb count for that particular item. Every baked good, like bread is always close to 50% carb, so ifyou had an item that weighed 100g it would have exactly 50g of carbs. Make sense??

You can obviously do this without a nutritional scale but having the built in database makes it easy. I just do it manually with a calculator and scale at home. If you google "carb factors" you'll probably pull up a lot of info.
