Something happened on EE.

We were just in line for EE when suddenly everyone in line was quickly ushered out and the whole ride was closed off. No idea what happened but I'm very curious!

Maybe someone got sick and they had to pull the cars to be cleaned?

maybe a live snake fell on someone's lap or better yet the Yeti actually moved.....

It was probably either one of these: something triggering an intrusion sensor, trains getting too close from guests slowly exiting the trains causing an E-Stop or just a faulty sensor. None of these are uncommon and cause Space Mountain to go down at least once a day. At a roller coaster in Disney, even the slightest problem will have the attraction down for an hour at the minimum. Therefore, the queue needs to be dumped and the trains need to be evacuated or cascaded (Cast Members manually push trains/rockets to the next zone.) There is nothing to worry about and you are safe to ride.

When I was there last month, the car in front of me loaded and then all of the sudden the cm's told them to get off. They went back onto the platform, they sent the train out empty and then they got on the next one. Everything was fine after that. Not sure what happened.

That would be done with a normal station stop at unload. For other attractions, a normal ride stop at unload. This should never cause an E-Stop. They would cycle the train a couple of times after custodial cleans it and then start sending guests in that same train.
We rode it about 2 hours later so whatever it was obviously wasn't serious and was most likely one of the things you listed.
