Mama Melrose Arugula and Herb Pesto

Hi, was at Disney World last year with my family and we ate at Mama Melrose's. The food was excellent and they gave me a Recipe card for their pesto. I finally got a chance to make it and the ingredients don't sound right. Can someone please confirm if this is correct.
1/4 lb arugula
1/4 lb basil leaves
1 qt olive oil
1/4 cup chives , finely chopped
5 1/4 fluid oz extra virgin olive oil
1 tbsp Kosher salt

Gather all ingredients and place into the robo coupe except the chives. Mix well and fold in chives

Aweful lot of Olive Oil

It does sound like an awful lot. I'd just put everything in the food processor - reducing the oil to a much lower amount, then adding more little by little as the pesto processes until you get a good consistency.

I agree that does sound like a lot of oil. I think pezpam had a good idea of how to judge it. Let us know how it comes out.

Actually, based on the amount of basil and arugla, it sounds about right to me. I'd start by cutting the whole recipe in half, and then I might cut it down again. But then I'm just cooking for 2.

Thanks for the advice. I will try cutting the recipe down and start there. My husband will be happy. This recipe was one of his favorites. Thanks again.I'll post my results.

You need to cut it down by WAY more than half. Do you have any idea how much a quarter POUND of arugula is??? It is a LOT!

These recipes are for restaurant batch sizes. You have to majorly scale down something like this unless you are planning on eating pesto for the next month...

Cut the olive oil down to about 1 cup, then adjust the other amounts based on that.

Has anyone made this pesto? We were there last week (pleasantly surprised at how great the food was) and I LOVED the pesto. I just didn't notice any arugula flavor it seemed to be just basil. I think I loved it because it didn't have cheese.... it was so light and flavorful!!!!!

The pesto came with the calamari.
