I am not totally sure, but I assume that it is only done a few days before each cruise.
On our last back-to-back, the head server approached us on the second-to-last day and said he was about to work on seating arrangements for the upcoming cruise, did we have anybody in particular we wanted to be seated with.

Previous threads seem to indicate rotations are assigned about 2 weeks out. I would imagine actual tables could be then or all the way up to the day before.

On our first B2B, we weren't asked anything about the second leg although we went to the HS and asked to be placed with the same team. We had to go to dining changes to get it fixed when we reboarded as our seats had already been assigned.

On our second B2B, we were asked and our tickets were correct when we reboarded.
