Technically, you can still do Palo on Pirate night depending on the time of your seating and Palo reservation time. Drinks at PN and dinner at Palo.

When you board you will be assigned a dinner rotation. There a 3 different rotations. From a different post these are the rotaions.

Western A/Eastern A/Eastern B:
RAERAER
AERAERA
ERAERAE

The letters tell you the name of the restaurant. For example the first one you would eat at Royal Palace, Animators Enchanted Garden, Royal Palace, Animators, Enchanted Garden, Royal Palace.

Each restaurant will have the regular menu one night and a special menu another night

Also copied from another site (lbgraves is good so I'm sure this info is correct)
Night 1 - Rotation menu /Crush if in AP
Night 2 - Rotation menu [formal night] /Crush if in AP
Night 3 - Rotation menu /Crush if in AP
Night 4 - Pirate menu
Night 5 - Prince & Princess menu / Animation if in AP
Night 6 - Captain's Gala [semiformal night] / Animation if in AP
Night 7 - See You Real Soon menu / Animation if in AP

So if you want to look at all the menus decided where you don't want to eat.
Then you can call Disney and request a rotation they will try and give it to you, but you won't find out until you board.

OR just book for one night and enjoy.

not to miss

It is hard to figure out what night to book Palo and Remy because you just don't want to miss anything. Since it appears you are first time cruiser my suggestion would me to do Palo brunch and not miss any of the dinners.

However if you must do dinner I would not miss the first night, last night, 2nd nightt in Animators Palate and pirate night if you have young kids (<10yrs old). My 8 yr old loves pirate night so we can't miss but when he gets older we will opt out of it for sure.

Is Pirate Night the 2nd night on a 3-night cruise? That may be our best bet as I don't know that our group of 4 adults would be into the whole pirate thing other than the fireworks.

For what it's worth--we're doing Palo on Pirate Night and Remy on Princess Night.

The only night I wouldn't do it would be the first night--unless you eat late. Never know when your luggage and dress clothes will show up!!!
