We skipped AK once during a three day whirlwind New Years Eve trip.

We have skipped both AK & HS on shorter trips.

We went during food & wine and MNSSHP in October. We went for 5 days 4 nights. First day & last were travel days. So we only went to MK for MNSSHP and to Epcot for food & wine.

It was a wonderful vacation and we didn't miss AK or HS on that trip.

We often skip AK, but we go fairly often. Going to AK every couple years is enough for us though. If this was my first visit, I probably wouldn't want to skip any of the parks. Could you try DHS on your first day? If you go there first, your DD wouldn't have anything to compare it to. She won't miss the castle, if she hasn't seen it yet.

I say skip DHS ! We have in the past also as its not our favorite park.

We are skipping Epcot this year.
I know for most that is the last park they would ever skip. But we were there 6 months ago and really I think skipping a year will not matter in the least to us! Out of all 4 parks it our least fav.... right now with my kids likes we would rather do the other 3 parks and we are doing MNSSHP this year
If it were my first visit I do not think I would skip it esp if she likes Disney Jr

Not usually. When we do, we skip DHS.
Heading home again in August/September 2013 - 26 Days in Disney
Pop Century - November 2013
BLT Christmas - 2 weeks - December 2013

We haven't had to skip a park on any of our trips yet, but if we had to make the choice it would most likely be DHS.

We skipped AK on our last trip. We only had six days, and it was 3 for Epcot, 2 for DHS, and 1 for MK. We also did MVMCP one evening after DHS.

We skipped Epcot last year and plan on skipping again this year. We spend most of our time at MK with our son he will be 3 this year. There a is small chance my wife and I will hit Epcot just for some drinks in the showcase- Grandma is coming so we have baby sitter

We have skipped Animal Kingdom and Hollywood Studios on previous trips. We are skipping HS on our trip in June. There aren't enough rides for our 1 year old to go on. My 8 year old doesn't like TT or RR coaster. So we will spend 2 days at MK. We are also going to a water park for the first time.

We were going to skip a park on our last trip due to it being only 3 days, and the park that got cut was DHS. We wound up staying two extra days and going there after all though.
Oct '00, '02, '04 - Off-property 3 weeks each
March 06 - Spring Break
July '07 - AK Lodge 3 weeks
July '12 - POFQ 10 days
March 2013 ASMu 5 days ......May 2013 POP 8 days...... October 2013 POP 10 days *

Skipping a park is perfectly acceptable. It's all about what you and your family like. My wife and I did a one day trip where we only hit HS (it was MGM at the time.) We skipped Epcot when DD1 was 5 and DD2 wasn't quite yet 2. This trip we're skipping AK and hitting water parks instead. We'll have two days at MK and are starting and ending the trip with MK.

There's something magical about walking down Main Street USA for the first part of the trip and seeing the castle in all its glory. It's a memory you won't ever forget.

If we don't have park hoppers, we skip Epcot. Way too boring for our family.
