We are in the same boat as the the OP but Palo isn't do or die for us. We are going to see what our restaurant rotation is and then try to schedule Palo for one of out repeat MDR nights. According to the Disney site (as of this moment anyway) there are several nights with reservations available so we'll see how it works out.

I would recommend Palo for brunch and dinner if you can do it.

Parrot Cay is one of our least favourite restaurants. Animator's palate in the middle. Lumiere's / Triton's is our fav of the MDRs.

2 more things! Is formal night, prince and princess, a special menu? Ok to skip? Also if in ap for formal night they wouldn't do show, right?

If we book 4 people for Palo dinner, how late can you change it to 2 people without penalty?
