IMO the crowds at SeaWorld would follow the same crowding as the ones at Universal. We normally do a US/SW/DC trip and have always seen the crowds mirror each other.

There is no calender that I have seen. SW crowds are way different from parks where you are standing in line all day to do rides. the chrsitmas shows do run during the week also but only at a certain point. We went for new yrs eve and it was crowded like a level 10 but still very managable. If you want to go and see the shows and holiday stuff too I would definitely spend 2 if not 3 days there. They have a lot.
