Can someone tell If you rent point to are you able to access the early entry every day of your stay? I thought I read once you couldn't

Anyone staying onsite does have access. You just need your room key. (This goes for WDW too)

Is early entry every day for onsite guests, or was that only for the holiday weeks last month?

Every day, and has been since they opened Carsland.

It's everyday of on site guests but I think it's back to: Disneyland = Tues, Thurs & Sat
California Adventure = Mon, Wed, Fri & Sun
Although they have AP Early Entry ONLY on WEEKENDS from NOW til April 14th with a couple of weekends not available. It's the opposite of the hotel guest but if you have an AP with block out dates BUT you want to go - you must pay for the block day. This means Premium and sometimes Deluxe are good to go!! I think if you stay on property PLUS have an AP (mostly premium) you MAY have a choice! This is why we do DVC!
