Favorite cookie recipe

I am going to a cookie exchange later this month. I was hoping for some new cookie ideas to try and take along with me. Please post your recipe!

Forgotten cookies (these are metric measurements, you'll need to convert to US measurements)

2 egg whites
120 grams caster sugar
120 grams walnuts roughly chopped
150 grams dark chocolate (about 70% chocolate) chopped
1 teaspoon Vanilla extract.

Heat oven to 180 degrees celsius. Line baking trays with foil. Whisk egg whites with a good pinch of salt until stiff and dry. Gradually whisk in sugar a little at a time to make a thick and glossy meringue. Tip in nuts, chocolate and vanilla and fold in.

Spoon heaped teaspoon fuls of mixture spaced apart on the sheets. Put in oven and immediately turn off. Leave without disturbing overnight. In the morning carefully peel cookies off the foil and store in airtight containers.

We have a nut allergy in our house, so we don't add the nuts, we add extra chocolate, but for gifts I add the nuts.

Ginger Bursts - they are AMAZING!



Ginger Burst Cookies
3/4 cup sugar
1/4 cup brown sugar
3/4 cup unsalted butter, softened
1 egg
1/4 cup molasses
2 1/4 cups flour
2 tsp baking soda
1 tsp cinnamon
1/2 tsp ginger
1/4 tsp nutmeg
1/2 tsp cloves
3/4 cup crystallized ginger, chopped
1/2 tsp salt
sugar for rolling

Preheat oven to 350 degrees.

In a large bowl, combine sugars, unsalted butter (softened), egg, and molasses. Beat until light and fluffy. Add flour, baking soda, spices, crystallized ginger and salt. Mix well. Cover with plastic wrap and refrigerate 1 hour for easier handling.

Shape dough into 1 inch (or smaller) balls; roll in sugar. Place on ungreased cookie sheet and bake for 9-12 minutes.

Where do you find crystalized ginger? I have someone in this house who would FUH-REAK over those!

We made peanut butter thumbprint cookies with raspberry jam today as part of our annual cookie-athon (made 6 different kinds). The PB thumbprints were to die for! Tasted like the best pb&j you've ever had.

Brownie stuffed chocolate chip cookies

Bake your favorite brownies
Make chocolate chip cookie dough or buy a couple of rolls of the choc. chip cookie dough.
Cut the brownies into 1 inch squares.
Put cookie dough on top and then on the bottom of each brownie.
Place on cookie sheet and bake according to cookie directions. Cool and eat.

These are my absolute favorite, go-to chocolate chip cookies. ESPECIALLY pay attention to how the cookies are broken in half and put back together, to create the pretty top on the cookie.

I am making 2 new cookies this year. I have made the dough but did not bake them yet (I freeze dough and then bake closer to Xmas). I have, however, tasted the dough and it sure is good!

Yes, you can find them in the spice aisle - plus I found them in the bulk section of a local grocery store here. They were MUCH cheaper that way ($3.99 a pound vs $3.99 for a few ounces prepackaged).

And I loved eating them 'as is' while baking Yum!!!

ETA: I'll happily drop a pound or two in the mail for you if you can't easily find it - I know your grocery options are limited in your area. Just send me a message on FB
