What do you think of my planned adr's?

I'll be booking on Sunday for the first ten days.. Excited muchly
I'll list all where we are eating, the first set are on deluxe dining plan then we go into a villa & are also staying at universal for a night (places to eat there I have no idea & would love suggestions) I'm just putting the Disney places down & would also appreciate names of none Disney restaurants for sea world & waterpark days etc).
We are 2 adults DS 12 & DD 4 (when there) & are staying in orange tree when off site.

Breakfasts: Kona, chef mickeys, Tusker house, ohanas, 1900 park fare.
Dinner: CRT, 50's PT, teppen edo, saana, spirit of aloha.
Once off site we will be plus my mum & are planning:
Breakfast: crystal palace
Lunch: coral reef
Dinner: akershers, bog.

This is our first visit (oh went when he was 12) & we are all VERY excited!
