VA how to tell new config or old ?
Is there anyway to tell which seat configuration the plane is that we're going to be flying on before OLCI or is it a case of just seeing if there is PE only or PE and Economy in the bubble when I do OLCI next Thursday ?

Yes, once the seat map opens up at OLCI you can tell by the layout. No way before then I am afraid.
