I need some easy cookie recipes that are not labor intensive, don't have pb, nuts or treenuts (my son is allergic) and that can make a lot. We are having a Christmas party and its going to be dessert only (and because of my son's allergies I'm doing all the baking). All of my old recipes either have stuff he can't eat, don't make a lot or take a lot of time. Suggestions?

Turkey, Clay, and my favorite all time christmas song..all on the same day..it doesn't get any better!
Learned the hard way not to store meltables in the oven

check out both of these threads from the DIS cooking board..the first one is mostly all cookies,biscotti, etc...

the second is all kinds of Christmas goodies..you surely can find something in there...my vote would be for the cookies made from cake mixes in the first one..so easy, and delicious!

We love the Oreo truffles. We decorate them with holiday sprinkles and also use white chocolate for the coating.

Here's another suggestion:

Forgotten cookies!

3 large egg whites at room temperature
2/3 cup sugar
1/2 tsp vanilla extract
1 bag of semisweet chocolate chips

Preheat oven to 350 degrees. Line cookie sheets with foil (do not grease).

Beat egg whites at medium speed until stiff peaks form. Continue beating at medium speed and add sugar, one tablespoon at a time.

Using a spatula, gently fold in vanilla and semisweet chips.

Drop by spoonfuls about 2 inches apart onto cookie sheets. Put cookie sheets in oven and immediately turn oven off. Leave door closed and do not open for 8 hours. Store in an airtight container. Makes about 4-5 dozen.

Hint: do not make on a rainy or damp day - meringues will be sticky (but still taste good). A bowl with higher sides is best for fluffier egg whites. I use Christmas M&Ms instead of chocolate chips during the holidays, but I know you can't since those are not peanut free.

what about making cake mix cookies? They are so simple to make. You take your favorite cake mix, 2 eggs and you can use either 1/2 cup cooking oil or 1 stick of softened butter. You can also add in pudding mix to flavor them or chocolate chips. They taste very good and are very easy to make.

My favorite is to take a yellow cake mix, mix in pistachio pudding mix- but this has small bits of nuts so not good if there is nut allergy.

thanks everyone! I need to bake a lot and I'm hoping to knock some out and start freezing them by the weekend. Too bad my oven is so small!

I forgot to add, I have also made crinkle cookies the same way. Lemon crinkles-
Lemon cake mix- lemon pudding mix make the dough into small balls and roll them in powdered sugar before you bake you can also do this with a chocolate cake mix if you want to do chocolate crinkles. yum
