Good evening! Allison- that roast looked amazing! We also had prime rib for Christmas along with a rack of pork. Both were delicious but I did not brave the standing rib roast.

Do you know how well one would freeze? I like the cuts from Costco but they do not carry standing roasts throughout the year. I need to entertain Buddy's boss and his wife and was thinking of attempting one.

Tomorrow is our Holiday meal with our neighbors so I am roasting a turkey with all the trimmings. New years Day is a baked spiral ham. And then I diet! I have put on a lot of Holiday weight since thanksgiving.

i freeze several every year, I fact that roast was one of the ones that I froze last year. I still have two more from last year to cook before I can start on the ones I bought last week.

tonight was chicken fajita salad... Something I made up as I went along...

Romain lettuce, avocado, chicken strips cooked like fajitas, tomatoes, garlic, onion, cheese and lime juice.

Happy New Year! I hope that this years brings all that is wonderful!

Buddy and I are staying in tonight, as are my kids. Donny and Anna are getting an early meal out and then back hoem but Marisa and Dan refuse to be on teh road at all. Buddy and I are having leftovers from yesterday's roast turkey. I have a bottle of Nuvo for us!

Tomorrow is a baked ham dinner for whoever shows up.

I just put a dry aged prime rib (bone in) roast in the oven.... Au Gratin potatoes are already in there, and the Brussels are sitting an waiting.... Bread is already baked, and we have some buttery soft brie for the bread.... Bubbly is in the fridge along with the glasses.

I just grated some fresh horseradish, mixed with a little vinegar and salt, in the fridge waiting for the roast...

My Christmas lunch comprised of Turkey breast roll. It comes rolled from my Chicken Pantry shop at the Vic Market.

I seared the outsides till golden brown and then pasted some herb butter on the skin.






The recommended cooking time is 30 minutes per kilo; so this size was in the oven for about 50 minutes.






I thought it a little on the pink side; but not severely so. The turkey was deliciously tender.







And I've been having a few of these turkey sandwiches for lunch lately!






My other protein was the stuffed salmon cutlets.







I ended up with about 2 of the cutlets leftover; and a bit of extra stuffing. Leftover lunch the next day was a hit! So much so that I think I'm going to put this on the menu on monthly basis.
So the major herb is dill in the stuffing. I also had celery, onion and pinenuts mixed in the breadcrumbs.
I cooked a cup of rice (17 minutes in the microwave) and then flaked the leftover salmon. Mixed it all together with a decent squeeze of lemon juice, a splash of white wine vinegar and a dose of olive oil.








My sides for Christmas lunch included a couple of salads....













Roast potatoes...







And stuffing to go with the turkey.







I think I've just about cleared out all the leftovers now....not bad for just under a week.

To its dinner was left overs but I have to tell you that I made a spinach quiche that turned out so freaking good. The only problem, I just through it all together and have no idea what the portions were. It was just left over fresh spinach, mozzarella, cheddar, milk eggs, mushrooms, and garlic All in a pie crust. I mean it was perfect... David could not stop eating it.

I hate when you just throw everything in a bowl, mix and it turns out so freakin' perfect that you wish you'd measured stuff so that you could make it again.

That quiche sounds lovely. Gives me an idea for dinner one of these nights.
