.....I find that the most expensive part of any meal is the meat bill, so I try to stretch it out by preparing things that you don't need to utilize as much meat. For instance, chicken quesadillas use less meat per person, so you can stretch it out that way. So does a stir-fry meal....hope this helps....

I do usually try to make things that have less meat but we got a great deal on the pork chops. Right now my DS14 is supposed to be eating a lot of meat plus drinking protein shakes. He has grown 8 inches in the past year but has only gained 10 lbs. he has to gain weight. He ate four pork hops last night.

Tonight all four kids are gone so DH and I are not cooking. Leftovers or sandwiches

One thing that was suggested to help my BFF's middle son gain weight was to wake him up in the middle of the night and have him eat a couple peanut butter and jelly sandwiches. Another parent on the team did that with his son and it worked.

Dinner tonight will be turkey meatloaf, leftover scalloped potatoes and roasted beets, have to use them up before they shrivel up.

People grieve differently for every loss that they experience. I am trying to put myself in your Dad's position and I figure we must be about the same age or so. Your Uncle was sick for a long time and the bond that your Dad had with him was a strong one. I imagine that your Dad was very conflicted about what he wanted for him and if he was anything like me he stopped knowing what to pray for. How do you ask Gad to take someone who is part of you? How do you ask God to spare him knowing that means more pain?

Your Dad may really be telling you that he is fine while he works this out for himself. He knows you are there and that you care and if you just keep keeping in touch that may be the best thing for a bit. I think that as much as I love my children and as much as I rely on them for companionship and for support in many things if I lost my brother or sister I might need to be my old sad self by myself for a bit.

Please trust him and your own instincts. You will know if you need to go to him because he will let you know just in what he says. If he is not depressed then I would trust what he is telling you.
Well said my friend. You are so right!!

I cooked 12 pork chops tonight and there are no leftovers. But they loved them. I breaded them in crushed ritz crackers and mixed in garlic salt. Wasn't the healthiest meal but it worked in a pinch

Stick around and let us help you with some healthy, quick and inexpensive meals. There are some good/great cook here. I am sure we can help you.

I was able to get to the Farmers Market last night and got some wonderful yellow squash, zuccini, new potatoes, garlic and onions. I went right home and cooked them all. Yea, Love meals like that!!

WFDT ~ Spaghetti with meat sauce, green salad and bread sticks.

Make it a great day everyone.

Dismom9761 - Hope your DS is okay.

Ellen - That produce from the farmer's market sounds great! What did you make with it?

Alison - I know you're having fun at DLR. Hope Fran is too and that Arline is okay.

I just read that there is another derecho/storm front heading towards the north-east coast. Keep safe everyone!

WFDT? We're having pumpkin soup tonight. I cooked about 2 kg worth of pumpkin. Whatever is leftover, I'll freeze so that we have something that we can thaw out and have for those just-in-case nights.

I would add some quinoa to meals. It is a complete food that is high in protein. I also like adding beans to dishes.

Who keeps moving the smilies!!!!!!!!!!!!!!!!!!!

Last night we went to dinner at Max Burger. Anna got some bad news, she was not awarded a position she had applied for.It was down to two of them and she had been waiting two weeks to find this out. Marisa and I asked her to go out for dinner and Donny joined us. My niece is working there, it just opened on Monday. The food was really good! I got some tempura onion rings that were delicious and we ordered some pulled pork spring rolls that I could have turned into my entree. The sauce for the spring rolls was like cole slaw that has been processes finely with ranch dressing. We also ordered chicken cordon blue balls with some sort of honey mustard sauce. YUM!!!!!!!!!!!!

We each ordered dessert but should not have. No one could finish it so next time I think we would order one to share.

The weather is going to be today so after I run all my errands I am going to make a casserole of some sort. I really have to start cooking. Buddy likes sandwiches but Holy Lazy!!!!!!!!!!!!!! I have been making him live on them!

There have been so many changes where she works and they are not that good for employees. She is not sure she wants the other position she interviewed for. She really did not like the manager. The one she was passed over for, that manager went to the hiring manager and told her that Anna was a perfect fit.

Morning girls,

dismom ~ That is so scary about your DS. I pray that the CT shows no such thing and all is well.

PIO ~ I didn't do anything special with my squash. I cut them both thin and steamed them. The potatoes I boiled and put butter and fresh parsley over them. I used the onions with the potatoes. Oh my it tasted oh so good.

Nan ~ I am so sorry for Anna. That is just the pits. Hopefully she will find the perfect job soon.
Poor Buddy (I say that with tongue in cheek ) I am sure he is really enjoying it. Stay cool today it is to be hot hot hot there.

Alison ~ So darn glad you and Fran are having fun. You SO deserve this break. How is Arlene today?

Same thing just a different day here. The weather has cooled off some but still no rain. It did rain, but it was everywhere but here. We were told yesterday that our County in Nebraska had been deemed ......"This hot, dry weather has caused the entire state of Nebraska to be labeled a drought, with Dawson County having severe conditions according to the National Climatic Data Center map" Quoted from our newspaper. We are to cool off today to in the 90's. That will be such a relief.

WFDT ~ Chicken tacos, spanish rice with all the fixins'

Make it a great day!

I LOVE roasted beets!

Dinner tonight will be the turkey meatloaf from last night. Had to go to the fabric store to pick up stuff for a quilt and didn't get home until late so I stopped and got Qdoba.
