It's been a few days since I've popped in on here, the Kids' activities have been running us ragged. We've eaten at home every day except yesterday, we were 2 hours away for a b-ball tournament & ate at Valentino's pizza. We've had cheesy chicken spaghetti, dh's b-day dinner was ham balls & hash brown casserole, one night of leftovers & chicken tacos one night. More b-ball today, but it's in our town so I'm putting a cheesy tilapia recipe in the crockpot.

Tonight we are going over to my Grandma's for a family dinner. I would say that it is getting me out of cooking for the night but I will probably do most of the work (she is 92 and I do not mind)

Tonight is takeout pizza. Seems I am coming down with something and barely have the energy to sit here much less cook tonight. Luckily, I have a promo code in my email so it should be too bad.

So the Tom Yum Soup was an utter failure!! It had a really bitter taste and just didn't taste authentic. Luckily we were able to salvage the 2 lbs of shrimp from the broth and they tasted good. We ended up repurposing them into Buffalo Shrimp salad.

The Big Mac casserole was a big hit, thanks to whoever posted it earlier!!!

This week:
Today - Beef Wellington, potatoes, veggies (we're trying to make a healthier version using lean sirloin steaks and a minimal amount of puff pastry)
Monday - black bean soup (WW recipe) and turkey kielbasa
Tuesday - Spicy Meatloaf (WW recipe), potatoes, veggies
Wednesday - salmon croquettes and salad
Thursday - chicken with feta sauce (WW recipe)
Friday - Buffalo Chicken meatball pizzas (using frozen buffalo chicken meatballs from Aldi and whole wheat flatbreads)

Well we have decided to give eating at home more a shot after realizing what we were spending eating out. Figure this will help with our budget quite a bit and possibly put us in position to do Disney this year.

Monday - Spaghetti
Tuesday - Tacos
Wednesday - Pork Chops
Thursday - Chicken / Rice
Friday - Polish Sausage / Pasta
Saturday - Meatballs
Sunday - Homemade Pizza

A bit behind here! This is my use it up week. So that meant no grocery shopping, we're using up what's in the fridge/freezer/cabinets.

Friday- chicken enchiladas
Saturday- pigs in a blanket, Mac & cheese
Sunday- cheeseburgers,fries, fresh pineapple
Monday- leftover enchiladas (we have a whole 9x13 pan left!)
Tuesday- chicken nuggets, veggies, Mac & cheese
Wednesday- Chicken pot pie soup, biscuits
Thursday- fish, rice, veggie

Here is some of the plan

Tonite is flank steak, potatoes of some kind and a big salad!

Tuesday leftover stuffed peppers with pasta and sauce. Garlic bread

Wed. Roast chicken (49cents a pound at Shoprite!!) rice, mushrooms and maybe corn bread??

Thursday if it's cold- Pernil and arroz y gandules if not probably steak sandwiches

Friday- Homemade Pizza!

This isn't set in stone but it's looking like this for the week.

Monday: pulled chicken with mac & cheese
Tuesday: hamburgers on english muffins
Wednesday: pigs in a blanket with mac & cheese
Thursday: Mac & Cheese
Friday:

I'd like to clean out the freezer a bit and I made a big tray of mac & cheese yesterday that DH won't touch & I don't want to waste. But there's a good chance I'll be packing that up into the freezer by Wednesday.

DH won't be home on Wednesday night (dept. dinner out), so we're having kids food and just salad with chicken on it for me. Mon and Wed need to have easy foods because both kids have acitivies that overlap time wise. Hot dogs are not a part of our normal diet and the kids know it's a very special meal.

Monday: chicken/rice and steamed frozen veggie
Tuesday: Chicken carbonara (Giada recipe on Foodnetwork.com)
Wednesday: Hot dogs, mac-n-cheese carrot sticks /salad for me
Thursday: beef roast/potatoes/carrots, steamed fresh broccoli
Friday: meatball subs and salad
Saturday: bowling and eating out.
Sunday: Superbowl Steak fajitas
