Alright, I fell off the wagon for a few weeks here due to a crazy after school rehearsal schedule.

Monday: cheesy turkey meatloaf with vegetables
Tuesday: leftover meatloaf
Wednesday: homemade Cracker Barrel style chicken tenders with veggies
Thursday: pork chops with green beans
Friday: will be out of town visiting family

Changed our dinner plans. I ended up going out to run errands and was out too late to make up the pasta. Instead we had homemade waffles with bacon and fruit smoothies.

Well it's Sunday night again (why do the weekends have to go so fast?!). So it is time to make the menu for the week again.

Monday: Homemade pizza. Will make the dough and let it rise in the afternoon.

Tuesday: Spaghetti and salad

Wednesday: Potato soup, sliced veggies, and biscuits and leftover ham

Thursday: Dinner at my sisters. (Need to make and bring dessert)

Friday: Take out (Subway or Pizza)

Saturday: Pork chops, veggie and rice

Sunday: Shepards Pie

I hate to put take out on the menu for Friday, but by the end of a long week we're exhausted and don't want to cook. It's happened every friday this month so I might as well just plan for it and pick something cheap. Better than a 50 dollar dinner out I suppose.

Tonight we're having rosemary baked chicken, potatoes, and green beans. One of the kids requested it. Win-win cause I can just throw it all in the crockpot. I'm using the McCormick pre-measured spice card. It calls for roasting the chicken, but it was great baked too.

This is me on Thurs! So I am just going to plan on it too. Last Thurs was Chick-fil-a, maybe $7 for the both of us so not bad at all.

This week will pasta heavy. Saw a new recipe for cheesy chicken spaghetti and we will also have spaghetti and meatballs. Not sure about the other days yet but it will come out of the freezer so maybe salmon and there is enough chicken to make another dish.

I haven't thought too much about this yet but based on the current state of the kitchen:

Monday - grilled cheese sandwiches
Tuesday - chicken ceaser salad
Wednesday - pulled chicken sandwich
Thursday - meatballs with pasta
Friday - buffalo chicken (strips?)

I have vegetable beef soup in the crock pot for dinner. I might make biscuts to go with it.

Last night I made chicken taquitos from the Annie's Eats website, they were good but took quite a while to make as I did'nt have any cooked chicken on hand. Now I do, so tonight I'll be trying the cheesy chicken spaghetti from the Plain Chicken blog.

I did my grocery shopping yesterday. This is our menu with a few new recipes I'm going to try.
Mon.-we had tuna on crackers & salads
Tues-baked ziti & garlic bread
Wed.-chili & cornmeal cheddar biscuits. (I've never made these but they sound yummy).
Thurs.-tacos
Fri.-pulled chicken sandwiches, using a Cafe Rio recipe I found & fries
Sat.-ribs & rice
Sun.-cinnamon roll cake/casserole (also a new recipe I found..I'll give it a try since it will be just me & the boys this night).

Tonight is

Salsa Chicken
Rice
Cheese Quesadillas

I have just felt so uninspired in the kitchen lately. The reason is that I am trying to make meals DIRT CHEAP so I can sock away the rest of the grocery $ for our trip coming up. Just can't wait to get to Disney and eat yummy food again...
