Now that winter has come I see so many people with Chicken and Dumplings on their menu... can you please post your recipes for this... it sounds so good.. I know I can find the recipe on the internet but I would love to know which ones you all use.

Mine is SUPER simple
I boil chicken breasts and shred them. I add some chicken bouillon and pepper for flavor. I buy frozen Reames brand noodles or dumplings and simmer them for about 45-60 minutes. Add whatever veggies sound good. That's it! So easy ad a favorite for both of my kids

I have a simple crock pot recipe. This recipe makes about 8-10 servings. 3 of us eat on it for a couple days.

I put 3 frozen chicken breasts in the bottom of the crock pot. 1 large (or 2 small) can of cream of chicken soup. 1 16 ounce can of chicken broth. Carrots, onion, and peas (we use a frozen mixture from our grocery - I put in about half a bag, but you could put none in or adjust it however you like). Cook on low 6-8 hours. One hour before its done, add one more can of broth and 2 cans of biscuits. I cut the biscuits into 4 pieces. Cook for the last hour and then enjoy! So incredibly simple and delicious!

I've been away from this thread for awhile...Just to crazy with the Holidays...Now, I'm back All though we have stuck to eating at home.
Tonight (Friday) was left over pulled pork that was made yesterday w/ corn on the cob and cold slaw.
Saturday Chicken an Dumplings from above. And making Broccoli and Cheese soup in the crock pot for Sunday.

I've been using the recipe with egg a lot lately. The broth doesn't get cloudy if you don't stir them and peek. I have several recipes on that page.

I made these last night. I had one sheet of puff pastry left over from Christmas so I made mini chicken pockets and mini bacon and cheese pierogies. It's possible to make six mini pockets out of one sheet of puff pastry. :http://tinkmomfoodie-foodobsession.b...nd+puff+pastry

I have our meals planned for the month of January. We spent several hours yesterday prepping and cooking some of them to freeze. I still have a few more things to prep today and tomorrow. We had Taco soup friday night and last night we had cheesy potato with smoked sausage. Tonight its lasagna. Our goal is to not eat out all month.

Getting back on track after the hectic holiday season! I hope everyone had a lovely holiday. I know we did, probably one of the best ever!

Sun: Dinner at Uncles for cousins birthday

Mon: Taking my grandma out for dinner as a thank you for watching DD on Christmas break

Tues: Not sure. We're going to Ikea over an hour away so we may grab something quick or do fend for yourself when we get home

Wed: Dance night - quick dinner out

Thurs: Turkey Smoked sausage, mac & cheese, fruit

Fri: Soft tacos, refried beans

Sat: Sweet and sour chicken over jasmine rice

Sun: Crockpot beef roast, mashed potatoes, noodles, honey carrots

Mon: Chicken fajitas, corn on the cob

Tues: Salisberry steaks, mashed potatoes, green beans

Wed: Crockpot chicken and dumplings (if I have a half day at work, if not then quick dinner out before dance)

That sounds good. Are they fridge or frozen....the pastries? I can think of all kinds of things to stuff them with!

Tuesday chicken and cabbage rolls

Wednesday - leftovers

Thursday - Catfish, fruit, fries , Cole slaw

Friday -Hamburgers, fruit, fries

Saturday - pizza

Sunday -I have go to the grocery store

Made this tonight. All I can say is, OMGish it was delish. My DH had 3 helpings.
I doubled everything. Next time I don't think I would double the chicken broth. Thanks for sharing.

Sorry didn't see this until I already posted. I have used 2 recipes for broccoli and cheese. The first one is for the stove top. Second is for the crock pot. I prefer to use my crock pot. Just much easier....BTW, my DH is sitting on the couch winning now that he ate way to much. lol

I always double every recipe. I make a lot to share and to freeze as well.

Broccoli Cheddar Soup – Panera Style (Stove Top)
2 T. Butter, melted
1 large onion, chopped
1/2 c. butter, melted
1/2 c. all purpose flour
4 c. half and half
4 c. chicken broth
1 lb. fresh broccoli
2 cups, julienned carrots
salt and pepper, to taste
1/2 t. nutmeg
16 oz. sharp cheddar cheese, grated
Saute onion in butter. Set aside. Whisk butter and flour over medium heat for 3-5 minutes. Stir constantly and slowly add half and half. Add chicken stock, still whisking.
Simmer 20 minutes.
Add broccoli, carrots and onion. Cook over low heat until veggies are tender – about 20-25 minutes. Add salt and pepper. The soup will have thickened by now.

Carefully transfer soup mixture to blender and puree. Return soup to pot (or crock pot) over low heat. Add cheese. Stir until well blended. Add nutmeg right before serving.

Makes 8-10 servings.

Broccoli Cheese Soup in the Crock Pot

Ingredients:
1 (32 ounce) bag frozen chopped broccoli
2 (10 3/4 ounce) cans cheddar cheese soup
2 (12 ounce) cans evaporated milk
2 tablespoons Mrs. Dash seasoning mix
1 teaspoon black pepper
1/2 onion, chopped

Directions:
1. Combine all ingredients in slow cooker and stir together.
2. Cover and cook on low 4-5 hours.
3. *Note:Do not overcook or broccoli will become mushy.

Enjoy!
