Yesterday was crock pot mac and cheese. Today I am making peanut butter and shrimp egg rolls and Thai style peanut sauce shrimp over linguine. Both recipes should be in my blog under the search feature.

Tonight we are having pork chops marinaded in raspberry vinaigrette cooked in the crock pot. We'll have jasmine rice with it and probably steamed broccoli. I might make some chocolate chip cookies too.

Tonight is Crock Pot Beef and Broccoli and Rice. I also added Bell Peppers to the beef in order to bulk it up a bit more without adding too many calories.

oooh, I have the easiest way to make breakfast potatoes!!

I bake my potatoes in the microwave until theyre soft. Then take them out and cut into cubes (skin and all). I heat a skillet with butter and place the potatoes in it. I season with Badia Sazon Completa (you can use whichever seasoning you like, we just happen to always have Badia) and keep browning them up until they're just a bit crunchy outside but still soft in the middle. Quick and painless, done in less than 15 minutes!

Friday-Garbanzo Bean Stew (ended up being East Side Mario’s—DH had a really stressful week)
Saturday-Leftover chicken
Sunday-Shepherd’s Pie
Monday-leftover Shepherd’s Pie
Tuesday-Homemade Pizzas (using naan bread for the crust)
Wednesday—Bean and Rice Burritos
Thursday—Steak and baked potatoes
Friday—Turkey medallions with our last package of Lipton noodles
Saturday—Pasta Casserole
Sunday—leftover pasta casserole
Monday—Roast beef in the crock pot with root veggies
Tuesday—Roast beef dips
Wednesday—Chicken Fried Rice
Ugh. The oven heating coil snapped suddenly on Monday afternoon!! I wanted to make cookies, so I turned the oven on and........zzzzzzzzttttt! It made the sound like when a lightbulb burns out and then sparked and popped (and scared the bejeebles out of me). I looked inside and saw that it had snapped so I turned the oven off and hubby called the landlord.

We're still waiting for him to fix/replace the oven. We were covered for Monday...we were having leftovers which we reheated in the microwave, but Tuesday we ordered pizza since we couldn't make it at home and I hadn't made a back up plan.

Tonight we are having hamburger helper instead of the burritos (I made them and froze them) but the rest of the week should stay the same.

Just wanted to update my few changes...

Thanks tinkmom. Looks like something we love. Only thing is that in your blog where the link is for the eggrolls it takes you right back to the pb shrimp page.

I'll be trying this. We just recently discovered we love Asian peanut butter recipes.

we are holding strong about with this. We have only eaten out twice in 2 weeks and we have even stopped going out for lunch on my days off. We have are eating mostly from the pantry and the freezer so even our grocery bill is less than 75.00 a week for a family of 3(sometimes 4 on the weekend) Tonight its a new recipe we are trying for chicken carbonnara. We have tried lots of new recipes in the past couple of weeks. I am really enjoying eating at home and saving money.

This exact thing happened to me last year ...two days before Christmas ....and my whole family was coming to MY HOUSE to cook and have Christmas dinner! We had to find the replacement coil on the internet and have it shipped overnight.

OH Geez swapping around again !!! so we already swapped out Mon/Tues now I am changing today and friday.. I couldn't find the cooked burger for the HBH in my freezer this AM -- I might be crazy and really didn't save any from the taco night?? I D K... so anyway tonight will be DiGiorno for the boys and I'll still have the shirmp and zucchini.. and tomorrow (Fri) will be the HBH, Ravioli and Fish!
I love Crockpot Mac & Cheese.. I use Paula Deen's Recipe.. but a few weeks ago I made it in the oven with some ritz cracker crumbs.. OH YUM.. LOL
