Ooh a fan of Briberry... and WCMI I hope?
Ok, well at Disney World everything is basically fun no matter how old you are. I'm not even sure if I can make a list because it will just have everything down on it. I was thinking you could skip Toontown, but I'm not even sure if that's still open because of the Fantasyland refurbishment. Toontown won't exist shortly, so if you want to go to Mickey's house for any reason I would go this trip (unless they closed that section already.) Since you've been there before I'm not sure how much advice to give either. If you are a big fan of WCMI by briberry you could meet the Mad Hatter at breakfast at the Grand Floridian resort. He's a lot of fun to meet and no one could pass up a Mickey waffle. When are you going? The time of year depends too since they have so many special events.

I have no idea what WCMI by briberry is, I'm sorry, I'm new at this!
lol I'm going from December 11-19, so all the Christmas things will be there, I'm not sure if theres anything really special other than the lights, the Very Merry Christmas party and the Santas in Epcot World Showcase |

Are you on the TS Dining Plan? Probably not, or you would've made ressies already.
So counter service places, my favorites are -Cosmic Rays [MK] -The Seasons [EPCOT] -Flame Tree BBQ [AK] -ABC Com. [DHS] -Columbia Harbour Hous [MK] -Lotus Blossom Cafe [EPCOT- China] -Mexico's CS [EPCOT- Mexico] As for what to ride, EVERYTHING. Ride anything and everything. All the rides are different and fun in different ways, depending on what you like.
