Chocolate Caramel Cookie Recipes?
Anyone have any? I thought I had one but went looking and could not find one. I may just make a chocolate cookie with caramel chips, I'm guessing it would taste good.

Sounds delicious. I'd like to have one too. Just that combination makes me crave those yummy girl scout cookies Samoas, I think?

Not sure if this is what your looking for, but these are yummy and I make them every year for Christmas:
Caramel-Filled Chocolate Cookies Ingredients: 2 1/2 cups All Purpose or Unbleached Flour 3/4 cup unsweetened cocoa 1 teaspoon baking soda 1 cup sugar 1 cup firmly packed brown sugar 1 cup margarine or butter, softened 2 teaspoons vanilla 2 eggs 1 cup chopped pecans 48 Rolo® Chewy Caramels in Milk Chocolate, unwrapped (from 13-oz. pkg.) 1 tablespoon sugar Preparation Directions: 1. In medium bowl, combine flour, cocoa and baking soda; mix well. 2. In large bowl, combine 1 cup sugar, brown sugar and margarine; beat until light and fluffy. Add vanilla and eggs; beat well. Add flour mixture; blend well. Stir in 1/2 cup of the pecans. If necessary, cover with plastic wrap; refrigerate 30 minutes for easier handling. 3. Heat oven to 375°F. For each cookie, with floured hands, shape about 1 tablespoon dough around 1 caramel candy, covering completely. 4. In small bowl, combine remaining 1/2 cup pecans and 1 tablespoon sugar. Press one side of each ball into pecan mixture. Place, nut side up, 2 inches apart on ungreased cookie sheets. 5. Bake at 375°F. for 7 to 10 minutes or until set and slightly cracked. Cool 2 minutes; remove from cookie sheets. Cool on wire rack for 15 minutes or until completely cooled. |

I know. Ever since I started thinking about them they went from a xmas cookie to a Thanksgiving one. haha
I did see one using rolos. I bought the caramel bits. So I may use those instead. Glad to hear they are tasty.

I made a chocolate cookie with caramel chips a month or so ago. I was so looking forward to it, thinking it would be great, but it just wasn't. The caramel bits were too hard/chewy for the cookie. The taste was off. Disappointing. It didn't keep us from eating them (I've got 4 kids!) but we all said they weren't very good and not worth repeating.
I may have to try the kind with rolos. The chocolate caramel cookie concept is too yummy to give up on.

did you use those caramel bites that are round and soft or chips like morsels? The caramel bites seem to be pretty soft.

I used Kraft Caramel Bits. They were round and seemed pretty soft, so I was surprised it didn't give good results.

You could always give it a try and see how it works. Maybe you'll have better luck than I did. I think they might be better in brownies though, since the brownie is a different texture than the cookie. Maybe it would work better. I was hoping they would get gooey and stay that way, but they didn't for me.

A friend makes them with store bought chocolate chip dough and puts the Rolo in the middle before baking. They are awesome and it is an extra surprise because they look just like plan chocolate chip cookies and then they have caramel in the middle.

I made chocolate cookies with rolos once... oh they were to die for! In fact, I tihnk I used the recipe from the back of the Reese's peanut butter chips bag!

Thanks very much! I was just looking for a star recipe to take to a cookie exchange party. The hostess said no chocolate chip, and last year I took date balls (I make them every year and they are to die for, but didn't seem to go over too well at the party. I guess they're not everyone's thing.). I was thinking snickerdoodles, but that seemed a little boring. These rolo cookies sound perfect!

The rolo cookies are the BEST!
I make these cookies every year! They are fantastic!
I have brought them to a few different cookie swaps with rave reviews too. And they are not too hard to make.

Sorry, I didn't see your request right away, but here's the recipe. I got it from a friend, and DH asks me to make them every Christmas, they are soooo good. I skip the "strawberry" part, and just roll them into balls and roll in the sugar.
Swedish “Strawberry” Cookies Makes about 2 ½ dozen cookies ¼ cup butter 1 ½ cup Rice Krispies 8 oz. (1 1/3 c.) snipped dates* ½ cup chopped walnuts ½ cup flaked coconut 1 teaspoon vanilla ½ cup sugar colored sugars or extra coconut 1 egg (beaten) Dash of salt In medium pot, melt butter over medium heat and add the next 5 ingredients. Cook and stir over medium-low heat until well combined and thick and bubbly; about 5-10 minutes. (I never really saw ‘bubbly’ with this recipe because it is so very thick, I just guessed when it looked like it was boiling.) Remove from heat, stir in the Rice Krispies, walnuts and vanilla. Shape into balls or strawberries and roll in colored sugar or coconut. *To cut prep time, I’ve used pressed pitted dates; they work well. Chopping the dates in the food processor with the ½ cup sugar from the recipe is a really quick and easy way to ‘snip’ them. The sugar keeps them from getting all gummed up.
