Exclamation May have been posted, but I didn't see it.. Re: canned pumpkin

Saw a segment on the news last night about the shortage of canned solid pack or ready to bake pumpkin.. Libby's was mentioned specifically, but I imagine it will apply to other brands and store brands as well.. All the wet weather ruined much of the pumpkin harvest..

Anyhow - they said that once what is available in the stores now is gone, there will be none available until next fall..

So - if you use pumpkin at other times of the year, you better get out there and stock up now!

Thanks for the heads up. I may stock up on some the next time I am in the store. We don't make much--but pumpkin spice muffins would be yummy.

Oh, geez, thanks for this! I use canned pumpkin throughout the year as a replacement for oil/shortening/butter/eggs in cake mixes and it makes the most delightfully moist muffin-ish cupcakes ever (and much lower in fat & calories than the normal ones). I saw shelves and shelves of it at Wal-Mart last night; guess I'll head back today to load up!



In case anyone happens to be interested, the above recipe calls for 1 box of cake mix and 1 can (the regular soup-can size, not the big double can) of pumpkin. Mix and bake as directed. Spice cake is fantastic this way.

Yum, I have only done it with devil's food cake mix, have you used others?

My favorite is spice cake, but I tried butter pecan cake mix and that was pretty tasty as well. The friend who told me about this said she used it with chocolate cake mix and I was like, "Mm, yeah, that sounds great , " etc., thinking she was nuts, but it is HEAVENLY. I've only done Duncan Hines triple chocolate (or double...I don't remember which) because I was afraid of some sort of "pumpkin-ness" coming through the chocolate flavor, but it didn't at all.

I just dispatched my mom out to the store for pumpkin, and lots of it. I'm stuck at my desk at work until 4:30, but I'll definitely hit at least a few local stores after work to load up on pumpkin!

wow! glad I bought a few cans yesterday when at the store. I almost didn't, but they had a display right near the checkout so grabbed them.

I make those with Devils Food cake mix too. Yum! It is actually from a weight watchers recipe book.

I love pumpkin anything. I will definitely stock up. I have never seen canned pumpkin other than Libby's though?

I saw some at the grocery store over the weekend. Now I wish I had bought the whole case to put away for a few months until people were desperate and I could put it up on e-bay and make my millions!

I bought my 3 big cans at Costco a couple weeks ago.
That will last me a couple of years...no one else likes it.

I use it year round for my muffins and such, so I'm going to have to tell my Dson-in-law to grab a bunch when he goes grocery shopping this week..

No pumpkin??

There was an earlier thread about this just before Fall. Mid to late summer there was no pumpkin to be had here in SE MI. I spoke to the Kroger manager and he told me that the suppliers were out due to a bad season. There was some Libby's from time to time but none of the stores had their store brand pumpkin.

When Fall hit and I wasn't seeing any store brands back in stock and no sales on canned pumpkin I figured something was up. How do you have a ruined crop two years in a row? My dog is on a pumpkin diet mixed with his dry food and gets 2/3 of a cup daily. It's getting pretty expensive and I was planning on stocking up when the big cans went 99 cents. Haven't seen that yet. Walgreen's had the little cans (15oz) for 99 cents last week but had a limit of 3. I didn't make multiple trips because I thought I might see a sale at the grocery store.

Thanks for the heads up. Guess I better stock up on the big cans while they are still in the stores.
