freezing/thawing shredded cheddar cheese

I know that you can shred and freeze cheddar cheese, but what is the best way to thaw it? Just let it sit out? Will it be clumped up?

I've done it before. I just put it in the refrigerator to thaw.

The texture is slightly different after freezing, so I only use previously frozen cheese when I'll be melting it.

We eat frozen cheese on tacos or anything else that takes shredded cheese all the time. I don't freeze blocks, just shreds. To thaw I just let it sit on the counter or in the fridge, it thaws fine and honestly I do not taste a difference.

APs expired 1-3-2010, the girls are still good until 2-6-2010 but we have no plans for a visit before they expire. No plans for our next visit, it will be 2011 or 2012 before we head back. We've had fun DLR/DCA, we will miss you while we are gone. We took 14 trips from July 07-July 08 and around 16 from Jan 09-Jan 10.

I buy those big bags at BJ's or shred my own and freeze it. Usually I don't need a whole lot at one time so I let it sit out for a few minutes, wiggle it around and grab the few handfuls I need and put the rest in the freezer. Other than on Taco's I don't use a lot of fresh shredded cheese so I have never noticed a taste or texture difference. I usually have a spare block of cheese in the fridge for any fresh useage!
