My mom is 'in training'

My mom came to visit us today and brought along food to make for lunch. She made chicken nuggets for herself, DD and I and told DD she is in training for DW (ie formed nuggets as opposed to breast chunks). I told her it probably won't be that bad. We have regular DDP. We won't be stuck entirely with processed food for CS will we?

No, it won't be. There are all sorts of sandwiches and salads and some simple other entrees like BBQ you can get as CS. My favorite is probably Wolfgang Puck Express at Downtown Disney or Picnic in the Park at the Animal Kingdom.

The dreaded chicken nuggets are one of the things commonly found on children's menus, but your DD is too young for that to be a concern--she'll be sharing with you.

OP, if it makes you feel any better, there are often threads where adults want to know where THEY can get chicken nuggets and if they are allowed to order off the kids menus to get them.... They rarely feature on adult menus. I have never eaten a chicken nugget or a burger at WDW EVER. Not to my taste and there are plenty of other options. Worry not!
