2 weeks till our first trip

We are leaving for California in just 2 weeks. We plan on going to disney mid week, the week before Halloween. DH is 37 and has NEVER been to disney, and i havent been in 20 years. We have 4 kids as well, Girls ages 8, 7 and 5, and boy 4 months.

Because we are totally broke, and getting ready to file bankruptcy, we are going to do this as cheap as we can.( baby boy is a medical train wreck, so that is why we are broke) My Brother is paying for all of us to get in, we are staying an hour away with my uncle, and plan on bringing food to the park, to avoid costly meals. We are thinking just one special meal during our days there.

So, we are not sure of what we MUST do while we are there. We might only get 2 days, since my brother is a so cal resident, he might get the 2 day park hopper passes for socal residents. ( is this going to be a problem, as we are AZ residents, but we are going with 3 so cal residents)

So, what do we HAVE to see? What is OK to skip with the ages of my kids?
How can we get a schedule of shows and such? How crowded might the park be mid week?( tue-thur) We homeschool our kids, and we are loving the off season mid week opportunity.

Any tips at all??
