Holiday Morning Breakfasts

This morning my husband had a hankering and got up to make a batch of incredible pumpkin muffins for breakfast. They were fantastic! (He used the recipe for pumpkin muffins from the Smitten Kitchen blog.)

We're thinking of ditching our inherited store bought cinnamon rolls with gobs of icing tradition for Christmas morning in favor of making up a big batch of pumpkin muffins, dolled up with grated carrot, currants, a bit of lemon zest, whole wheat, and a rolled oat topping rather than the cinnamon sugar. When the kids are asked what they had for Christmas, I suppose they can answer "vegetables." For Thanksgiving, we were thinking of bringing a batch of mini sweet potato muffins, from the Colonial Williamsburg recipe (available for free on one of their tavern websites), for a light breakfast since everyone skips lunch in the excitement on the way to Thanksgiving supper.

How about all of you? Do any of you have traditions you're considering tweaking?

(PS, Not exactly "Christmas morning" related, but definitely holiday breakfast related: we pick up tons of the big boxed panettone cakes after Christmas once they get cheaper than our just making them in the bread machine ourselves, then keep the holiday spirit alive throughout the winter with occasional "panettone french toast" for breakfast. It is incredibly decadent and rich, and the best possible use for stale panettone I can think of!)

I always make breakfast casseroles for Christmas & New Years. They are things that you make the night before, and just bake in the am. I do one french toast and one egg souffle. That way, while we are opening gifts, the breakfast is cooking. Works perfect. (And on NYs, when Mommy and Daddy can't wake up - breakfast is ready

Last year, I actually made breakfast casseroles for everyone I work with, and all of my close neighbors (20 in all). That was my gift to everyone - and they had a great easy breakfast!
