Flying Fish Tasting Menu - May 2011

Amuse bouche: Chilled Delta asparagus crema; blue crab, creme fraiche, American sturgeon caviar and mint-infused oil; quail egg, duck proscuitto, and Meyer lemon vinaigrette


1st Course: Chardonnay-poached Cedar Creek clams; rustic chorizo & kim chee-laced fresh black-eyed pea & garbanzo stew scented with lemongrass, preserved lemons & crispy proscuitto cracklins


butter: sea salt, Tasmanian peppercorns & fennel pollen

2nd Course: Fragrantly-spiced Georges Bank monkfish; fondue of veal sweetbreads, celery root, and seabeans; pickled ramps and Navan-laced lobster roe butter emulsion

Kimonos at the Swan

Beef Satay with a Guava Sauce $11.50



Spicy Rainbow Roll (Spicy Tuna, Salmon, Avocado) $11.50



Gyoza (Pork Potstickers) $8.75



All was very yummy. We were very happy to find a place with good sushi that also had something to satisfy the non-seafood eater (me).

We went when they opened at 5:30pm and it was very quiet - I don't think the karaoke starts until later.

Margarita from Cantina in Epcot. I believe it was Raspberry. Looked better than it tasted. Disappointing.

Favorite Counter Service- Cosmic Rays Chicken

Really good Boma breakfast. The best scrambled eggs with goat cheese and carved ham

Just any FYI - I was SO in love with those scrambled eggs that I asked if they'd divulge the recipe. Per the chef, there's nothing special about them - just scrambled eggs and some goat cheese (plus dill or green onion, depending on what you'd like). The goat cheese itself is the "secret". It makes the eggs extra creamy as it melts down. In case you want to make them at home.
