Need advice/suggestions on budget and other things

My family will be driving from Chicago IL to WDW. We leave IL on Saturday June 20 to arrive on the 22 and check in to our Disney hotel on the 23. We will be there until the 29 and drive back.

We have the basic dinning plan, hotel and Disney tickets all paid for. We will want to go one day to Universal and one day to a water park and this will be oop.

This is our first family trip so I'm a little lost when it comes to making the budget. We don't want to have to be tight. If we want something I want to be able to just get it and not have to worry.

Now, I'm thinking 3,000. For the trip to and from (this would include gas, hotels and food) tips for our table service meals, the other 2 parks we want to go to (Universal and the water park) and just extras spending money.

Is this to little, to much or just right? I need help. I'm a person that can stress a lot and I just want this to be a fun nice time not full of stress and that's very hard for me.

Another question I had was about how to pay things. I'm very....lets say anal? about finances and I like to know what we have for money at all times. My check book needs Internet and I don't want to have to pay for Internet for the entire stay.
I guess the 2 options I have is to 1. take out Cash and just use that. In my mind that means only ONE receipt that I need to keep track of or 2. Use the room key? and pay that off every night (if I don't I will stress about not paying it off. I'm weird like that) basically I want to go to bed knowing what we spent that day and knowing what we have left over.
What would you suggest?

Thanks in advance. As you can notice I am a worry person. I try not to be but that's just how I am and I really just want to relax about it and your suggestions/advice would be very appreciated.
