Park tickets
It's just DS and I are going this time and now he is 10 (will have his 11th birthday at WDW) that means adult ticket prices.
We are going for 21 nights and I was considering an AP with the DVC discount and then getting the DDE too and then a 21 day ultimate ticket for DS. The cheapest price for 2 x 21 day ultimates that I've found was £472. We do eat a lot of TS as DS isn't keen at all on junk food/CS too much so will pretty much eat TS every night. I also refuse to drive over there so will be eating on site either at parks, other Disney resorts or at DTD but will also take a taxi to a few restaurants we are dying to try (Sweet Tomatoes, Bahama Breeze) All things considered does anyone have any advice on what combination of tickets/passes would be best for us? We got max use out of our 21 day ultimates last year and only didn't go to a park at all for about 2 days I think, even if we just went in for dinner or shopping on a rest day!

From what you're saying, the 21 day ultimate seems to around the same price as the AP with DVC discount. It that's the case, I'd be tempted to opt for those for you both. Even if you think there's no chance of returning within 12 months, you'd be kicking yourself if it did happen for some reason and you had to fork out again.
We've been buying the DDE card (now Tables in Wonderland) for several years and it pays for itself very quickly. Admittedly, that's probably due in no small part to the fact that the discount applies to alcohol as well as food, but we eat as much offsite as on and it's still a no-brainer for us.

For the trip in a few days we got AP for all 3 of us (me, DBF and my father) all with DVC discount, even though dad isn't a member (We live at the same address). Me and DBF were planning to go back again within a year so it made sense, and as it turns out we have one more trip booked for a week and 2 planned in May and September!!
Also Dad is getting soooo excited about the trip now there is a chance he might want to come on one of the other trips (especially the Halloween one) so it's worth the few extra dollars just incase. We got our APs and MVMCP tickets back in May so we got a fantastic rate on them too
