No/Low Carb Breakfast Suggestion

Weekday mornings, I eat breakfast during my drive to work. I make coffee and waffles or some other toaster item. Problem is... I really have to reduce my carb intake. Lunch & dinner are easy. However, I need to find a no- or low-carb breakfast I can prepare in minutes and eat on my way to work.

I've looked at microwaveable breakfast sandwiches... but, the sodium level is through the roof!! Short of preparing something the night before, is there anything out there that's quick and easy?

Low carb options

I like an apple with peanut butter(all natural)

Hard boiled egg

I make spinach egg and cheese bakes in muffin tins on the weekend store in freezer and pop in the microwave for 30 seconds good to go.

I really like Tofuyan's smart pockets when I need some bread. They have 16g of carb which is pretty good for bread.

I am a diabetic who is not on meds so i have to stay on a pretty low carb diet all the time. I frequently have two eggs soft boiled with a side of ham(small canadian bacon often). If I'm in a real rush i toast a slice pepper ridgefarm low car wheat bread and smear it with almond butter. You can add a fruit to that if you aren't diabetic on a cleanse program. Fruit to have is some kind of berry like blueberry, raspberry or blackberries. Limit bananas as they create a huge spike in blood sugar which will make you hungry shortly their after.

Aslo egg beaters with southwestern flavor work well with freshly sliced peppers.

Steak and eggs work for those who like that sort of thing but i'm not a big red meat eater myself.
