Christmas cookie thread

I would like some new recipies for great Christmas cookies, so I thought we could start a thread where you post your favorite tried and true recipies! I'll start!

Pumkin Chocolate Chip Cookies (sounds different, but they are INCREDIBLE!)

2c. sugar
2c shortening
1 15 oz can pumpkin
2 eggs
2 tsp vanilla
4 c flour (sifted)
2 tsp baking powder
1 tsp baking soda
1 tsp salt
2 tsp cinnamon
1 tsp nutmeg
1/2 tsp allspice
1 1/2 bag choc chips

Cream shortening and sugar, add pumpkin egg and vanilla. Sift dry ingredients together.(You should sift them at least twice, it really makes them good!) Add dry to wet, mix, add choc chips. Drop by teaspoon onto greased cookie sheet. Bake at 350* for 12 to 15 min. The key here is to take them out of the oven right before they look all the way done. They will continue to bake a little when you take them out. SOOOOOOOOOOOO good!

I make these to give away at Christmas:

Easy Oreo Truffles

1 reg package oreos
1 8oz package cream cheese, softened
semisweet chocolate chips or squares

reserve 5 cookies for garnish crumbs. Place all remaining cookies in food processor a few at a time. Process into fine crumbs. In a mixing bowl, combine with softened cream cheese. Shape into 1 inch balls with your hands. Dip balls into melted chocolate and place on wax paper to set. Garnish with remaining crumbs or sprinkles. Also works well to dip in white chocolate.

These truffles are so so good! Everyone always requests the recipe!

This isn't really a cookie, but it is really good! It tastes like turtle candies.

Pretzle Carmels

1 bag tiny pretzles (the ones that look like big pretzles)
1 bag Rolo chocolate candy
Pecan halves

Put pretzles on a cookie sheet lined with foil. Set 1 Rolo on each pretzle. Bake at 250 for 4 min. Take out of oven and immediately set 1 pecan half on top of Rolo and gently press down. Set on wax paper to harden.

Here is another one we love during the Holidays:

Snowballs

1c. butter
1c. powdered suger
1tsp vanilla
2c flour
1c. finely chopped pecans

Preheat oven to 350. Beat Butter, 1/2 c. powdered sugar and vanilla in a large bowl with an electric mixer on med until light and fluffy. Gradually add flour and pecans beating on low after each addition until well blended. Shape into 1in balls and bake 14-15 min on ungreased cookie sheet. Cool 5 min on sheet, then roll in remaining powdered sugar.

I'm making these and you don't list how much vanilla to use. I'm going to guess 1 tsp, but you should update in case anyone else is going to make them. Thanks!

those oreo truffles really are the BEST! i freeze them before i coat with chocolate, easier to handle when they're frozen.

i'm definately goint to try the snowballs too!

here's a fun easy treat that isn't a cookie, but always really popular.

i use the square small pretzels that look like checkerboards. place on a cookie sheet on tin foil. put one round melting chocolate on top (in red or green from the craft store). put in a 175 degree oven for about 8-10 minutes. then smoosh a red or green m&m (opposite color of the chocolate) into the middle with the M facing down. refrigerate until chocolate sets again. they end up looking like wreaths.

These sound yummy to me...and because I am "cooking-challenged" it might actually be easy enough for me to pull it off! I noticed that Rold Gold has pretzels in holiday shapes right now -- I think I'll try it using them. Thanks

Glad they were a hit! I made them to take to school for my DS's b-day, at first the kids thought they were weird, but after they tasted them , they were following me around asking for more!
