Are you talking about the file linked in my sig? I got a share request for the file, but it's already shared publicly.

@PurpleEars, do you know if I have the latest one? I'll put the latest one up there if there's a new version. Thanks.

I believe that's the one that people are talking about. It is still the same file as last year as I haven't had a chance to do the update it.

Just a quick update about downloading the file. I found a setting in Google Drive that prevents people from downloading. I changed the setting, so the download should work. Please let me know if it's still a problem.

Delicious!

I was finally able to order the fruit purée that Citricos uses to make my favorite WDW dessert - Tropical Fruit Creme Brûlée! Since it has to ship overnight to stay frozen, most places I found were charging at least $75 to ship! I finally found it from a seller on Amazon (I paid $28 shipping but it was absolutely worth it). It was my New Year's Eve dessert and it tasted as good as it always does at Citricos! I was in heaven and the whole family loved it.

Does anyone have the Shrimp and Penne Pasta in creamy lobster sauce recipe? It was served in Cap'n Jacks restaurant in Downtown Disney in 2010 and it was my wife's favorite. We were so sad to find that Cap'n Jacks closed! I have looked everywhere. Please help!

Hi, it has been a while since I posted recipes (okay a few years). Checked the index from what I see you don't have these. Hopefully I can get them posted. Tried and it took to long had to sign back in and lost my whole post.

GRILLED CAESAR SALAD
THE TURF CLUB BAR AND GRILL AT DISNEY'S SARATOGA SPRINGS

SERVES 4

Dressing Ingredients:

1 egg yolk
2 tablespoons Worcestershire sauce
1 heaping teaspoon Dijon mustard
2 tablespoons minced garlic
2 teaspoons anchovy paste
1 1/2 cups extra virgin olive oil
1/2 cup grated Parmesan cheese

Dressing steps:
1. Combine egg yolk, Worcestershire, mustard, garlic and anchovy paste in a medium bowl. Slowly whisk in olive oil to thicken the mixture. Whisk in Parmesan cheese and then refrigerate for two hours.
2. Shake or whisk chilled dressing before serving, and add salt and pepper to taste.

Salad ingredients:
1 tablespoon minced garlic
1/4 cup olive oil
An approximately 18 inch baquette
2 whole romaine lettuce hearts, washed and trimmed
2 lemons
1 cup grated Paarmesan chees

Salad steps:
1. Combine garlic and olive oil in small bowl.
2. Preheat large skillet over medium-high heat.
3. Halve baquette horizontally (giving you two thinner pieces that are as long as ever) and then cut each half into two equal pieces. Brush bread with the garlic oil you created in step No. 1. Grill in the skillet, oiled side down for 5-7 minutes or until golden brown. Set aside.
4. Cut romaine hearts in half lengthwise to make four portions. Lightly brush with garlic oil.
5. Using the same skillet, increase to high heat and grill the romaine hearts, garlic-oil side down, for about two minutes until slightly charred.
6. Meanwhile, cut lemons in half and lightly grill with the romaine.
7. To serve, place a slice of baquette in serving bowl and fan a grilled romaine heart on top of the baquette. Drizzle your dressing over the romaine, add a grilled lemon half and sprinkle with Parmesan before finishing with salt and pepper to taste.B

From Disney Files
Seems they removed this popular dish from the menu.

MEAT BOBOTIE
BOMA
Pronounced bo-bo-tee

Serves 10

Main dish ingredients:

2 tablespoons corn oil
1/2 cup onion, large dice
1 teaspoon cinnamon (adjust as needed to taste)
2 tablespoons rice wine vinegar
2 pounds ground lamb, beef or mixture of both
3 slices of white bread
1 cup cream
1/4 cup sugar (add more as needed for taste)
1/2 cup pumpkin seeds or almonds, sliced
1/4 cup seedless raisins
1/4 cup golden raisins

Topping ingredients:
1 cup of your favorite refrigerated, liquid whole egg product
1/2 cup heavy cream
1/2 cup milk

Steps:

1. Heat corn oil with onions in a saucepan to caramelize onions. (medium to medium-high heat, depending on your stove)
2. Reduce heat and add the cinnamon and curry powder. Mix well.
3. Deglaze with the rice wine vinegar. (In other words, stir in the vinegar to help capture all that spicy goodness).
4. add meat and continue cooking until meat is cooked through.
5. Drain about 90 percent of the grease. (Just do your best here. Nobody's going to measure your accuracy). Then tear the bread into small pieces and add it to the pan, along with the cream (not the cream/milk mixture; just the pure cup-o-cream).
6. Add the sugar and mix well. (Add a bit of water if the mix looks to dry). Then add the raisins and almonds.
7. Adjust seasoning to taste and cool.
8. in a separate bowl, hand whisk the topping ingredients (cream, milk, and liquid egg product) to form a custard.
9. Place the bobotie mixture in a small baking dish and top with the egg custard mix. Bake in a 325 degree (fahrenheit) oven for about 25-35 (depending on the container), until golden brown and cooked through to a center temperature of 165 degrees F.

Recipe supplied by Chef Brian Piasecki to the Disney Files, describes this South African staple breakfast food as having "a delicate yet spicy sweetness, balanced with the richness of egg.
