Since discovering that kidney beans help lower cholesterol AND since DH (whose had cardiac bypass surgery) won't eat red meat, I cook kidney beans seasoned with yellow onions, fresh garlic, sea salt and pepper and put the chicken in about 30-40 minutes before the beans are ready. I don't brown it first. Even my DD9 likes. The beans will also darken the meat.

Chili. You can make white chili, or regular old chili.
Sloppy joes - once it's covered in red goo, would you be able to tell the difference? My favorite to do with ground chicken is make lettuce wraps (like someone else said.). I just brown the meat and put this sauce on. I get it at Kroger or meijer in near the Ramen noodles and Asian type foods. http://www.simplyasia.com/products/S...Fry-Sauce.aspx Wrap meat in lettuce leaves (I use romaine) with chow mein noodles and bean sprouts. mmmm! Serve with fried rice as a side.
