Quick question, if we have enought points for 7 nights in a grand villa, having saved and borrowed, can we buy an extra 7 nights through dvc?

In a way. You can buy a few points at your 7 month window but not enough to do what you want. You can reserve DVC rooms on cash with a 25% discount thru MS, but subject to availability so that might not work for you.

The only option for extra one-time-use points from Disney is the provision for each member to be able to purchase up to 25 one-time-use points once yearly for a certain price per point. I can't remember what the price is currently. These points can only be used in the year purchased and cannot be banked. They can also only be used on reservations made during the 7 months prior to check in, so no home resort priority window is available if you want to buy these points.

You might have better options in seeing if another member could transfer points to you for a price. This would be similar to a rental, but the points would actually be transferred to your account rather than remaining in the original owner's account. You might be able to do it through a rental, but that would likely be pretty difficult to coordinate. Or it might be possible to book the remaining nights with cash. Or you could just buy more points.

It's up to 24 one-time-use vacation points at $15 per point.
