Since you mentioned "simple" and not necessarily QS/CS I'm going to throw a few more in here...

This is one of my favorite salads in all of WDW at LTT in MK only available at lunch...The Colony Salad...love this salad-love the Honey Shallot Dressing!!

The Plaza @ MK is a great one for sandwiches and is probably the most reasonable TS in the park...the Vegetarian Sandwich...

Le Cellier @ Canada/Epcot...ok I know this is a little pricier than most, but the salad itself is very reasonable considering there's lobster in it (@ $16)...it was very good...Le Cellier Lobster "Chopped" Salad...

Earl of Sandwich in DTD: Holiday turkey sandwich...yum!

Norway Bakeri in Epcot: open faced smoked salmon sandwich was very good.

Flame Tree BBQ: smoked chicken salad was delicious.

BacKlot express in HS: Had the grilled vegetable sandwich and the southwest salad with chicken and was pleasantly surprised.

Chicken BLT Salad or Grilled Veggie Sub at Restaurantosaurus - AK
Southwest Salad w/ chicken or Grilled Veggie Sub or Grilled Turkey/Cheese at Backlot Express - DHS

In addition to these meals, I like the atmosphere of these two places. In each one I found a less-noisy area to cool off and have a relaxing lunch.

Definitely the strawberry grilled chicken salad at The Plaza in MK! DH got a sandwich and he also liked it.....wanted me to try and see if we could maybe get a last minute lunch ADR there again 2 days later!
April 2006- DH & myself anniversary off property (NEVER AGAIN!)
March 2011-ASM Fantasia: DH, DS, nephew, & myself
June 2013-CBR DH, DS5, and myself
March 2014- CBR DH, DS6, nephew 17, and myself

December 2014- Disney Dream 3 night Bahamas followed by 2 nights at AOA and MVMCP DH, DS7 (birthday celebration!!), and myself

The hot pastrami sandwich at Rix Cafe in CSR is awesome. Some nice little tables right outside overlooking the lake, makes a great spot to grab some lunch.

I also second the hot Italian Sanwich both at Catalina Eddies DHS and at Pizzafari in DAK.

Regardless of where you go if you're light eaters plan to share. Portions are generally huge at the majority of wdw venues. My sister and I do it all the time and have more than enough to eat. You can't do it at a ts venue if you're on the dining plan but we've had the qs plan and just one of us would go order a meal and we'd still share. I like columbia harbor house mk, wolfgang puck express dtd, eos dtd, the plaza for ts, and the resorts we often hit which ever is closest to the park we're at to do a qs but take the time to get out of the afternoon heat for a while. we also like the lounges for something small.

Someone suggested the Aloha Pork sandwich at Captain Cooks, also there they have the Grown Up Grilled Cheese, it's really good. You can't go wrong with either option.

Second vote for the Caesar sandwich at Min and Bills. I got this with one of our leftover credits to take with us on our trip home. It WAS really good. The bread was sturdy enough to keep in the cooler too.

My all-time favorite sandwich is at Columbia Harbour House. It is the vegetarian hummus with broccoli slaw. Soooo good!

The turkey sandwich at Flame Tree BBQ at AK is delicious. It's served on a multigrain bread, has a cranberry mayo that is light but delicious, and is served with fruit. The chicken caesar salad at Sunshine Seasons in Epcot is yummy. The sandwiches at Earl of Sandwich at Downtown Disney yummy too. I've never eaten at Columbia Harbor House, but they have a sandwich that gets good reviews.

Love the chicken Caesar Salad at "the Mara" at Animal Kingdom Lodge. Our favorited sandwich is the Turkey, bacon & swiss on multi-grain bread at the Boardwalk Bakery. However, I don't see it on the new menu! The bakery in Epcot's Norway has an excellent roast beef sandwich, as well as a very good club.
