We regularly travel over Easter and simply tell our daughter that the Easter Bunny leaves her basket at home. We hide it in a creative place before we leave and it's actually become something she looks forward to when we return home from our trips.
Being this is your first time doing this, you can shape the story however you want. There will be more than enough candies and desserts to satisfy anyone in the parks and at the resorts. I'm sure you can find plenty of Easter activities to ensure that you mark the holiday without adding stress to your vacation.
Also, the idea of buying products through Disney is nice, but the cost is not. You'll part with enough money during your trip not to have to worry about an Easter basket delivery.
