How often do prices change?

I'm 98% sure of the cruise I want but I may need wait on other family members to see if they're going to go. It's one of the cruises in Oct. 2014.

I don't want to check back tomorrow & see that the price has jumped significantly.

Hard to tell, depends on the cruise. I'd like to say you are probably safe for 1 day, but its not a guarantee

From what I hear they can change though out the day but normally they don't change too frequently. It all depends on how fast the cruise is booking up.

You can hold a reservation for three days with no deposit, and even then the deposit is fully refundable after that point.

DCL uses pricing tiers. As one tier sells out, the price goes up for the next tier.

Putting a hold is always a safe bet

Our next cruise just jumped $100pp between yesterday and today for a 6A (5 day March 2014). I am so glad I put a 3 day hold on our stateroom and did the deposit last night. I think that is always the safe bet... no obligation/penalty with a reservation 3 day hold ... it will just expire if you do nothing, but it does lock in your price and secure a specific stateroom.
