Advice needed re Dining Plan

Hi, we are off in a couple of weeks, have free dining so for the first time ever we will be using the dining plan.

I know that starters aren't included, but we're not big on puddings. Could we have something else (coffee??) Not sure about the soda either - does water count?

Really my main problem is with the meals that cost 2 credits. we are at the YC for 12 nights. Should arrive by about 6pm and may just have a snack and straight to bed, so that's a saved credit. We the have the following dinners booked:
La Hacienda de San Angel
The Wave
Mama Melrose
Le Cellier (2 credits)
Hoop Dee Doo (2 credits)
Planet Hollywood
Be our Guest (wedding aniversary)
Paradiso 37
San Angel

Also Cape May for our last day - leaving at 2pm so no dinner that night.

Should I just use the credits for everything and then just see what we're left with? We'll be havng breakfast in room and then CS lunch.

Really need some guidance as I just can't get my head round this!
