Places with most vegetarian options?

Sooo excited to be going back to Disney in June. But since our last trip, we have added some vegetarians to the family. Some of our usual go-to places are not veggie friendly. Can anyone suggest some places that might be better choices for non-meat eaters?

Counter Service -

Columbia Harbour House has an excellent veggie sandwich
BOG - has a quinoa salad

Sunshine Seasons - tons of options
Tangeriene Cafe - excellent veggie platter

Backlot Express (I think that's the name, next to the Star Wars ride) - has a very good veggie sandwich

Don't know the name, but there is a counter service that has a veggie sandwich now

Plenty of places have veggie burgers or pizza, but they're not the best.

Boma (of course)
Any buffet will have veggie options
'Ohana - I know seems odd, but they have a veggie appetizer and entree for the veggie guests, in addition to the usual salad, side veggie, and noodles that everyone gets.
Chefs de France
Via Napoli - the one pizza I would want to eat
Liberty Tree Tavern - Lunch only
Tusker House

Definitely look thought the menus but it was my experience in January that most places only had one vegetation option. Someone can correct me on that but that seems to be what I remember. There are good options out there though.

If you want something that has meat on it, just ask to see if you can get it without the meat. I've done this at San Angel Inn, AK, LTT and other places. Usually they're accommodating, but you might have to wait a little longer.
