With the tentative settlement of the port strike & extension until possibly early February, will this affect our cruise out of Port Canaveral 02/10?

It shouldn't. The strike is for cargo workers, not cruise ship porters. They could always join them as a show of solidarity, but IMO it is unlikely.

The porters are not union at least at PC servicing DCL AFAIK. It was a big thing when DCL announced the terminal and the contracts to serve the ships.
