We are going in May and of course I am already looking at the park hours to sketch out our days and ADRs. Since the HS EMH days have already flipped to accommodate SWW (we will be leaving the first Friday of SWW), there are likely to not be anymore changes, but they could still extended the actual hours?

Mostly correct. Hour changes can and will happen at anytime up to and including the week you are there.

Scheduled EMH days can be changed. It has happened before. I would say that there is a 99% chance they will not change, but you never know!!!
