I've seen people mentioning that they are the only ship in a port that day, or about other ships being in port with them. How can you find that information. I'd love to look it up for our cruise in a few weeks.

Most ports have a calendar on the web showing what ships are in on given day. Just Google "Ships in Port Canaveral Calendar" or what ever port you are interested in to find out.
