I like the House Of Blues meatloaf recipe and it calls for an electric mixer. Greatest texture when done with one! Had to get out my calculator to adjust the amounts of ingredients...recipe was for a huge amount of servings. The meatloaf they served at their Downtown Disney restaurant was horrible...nothing like their own recipe I found online a few years back. They obviously didn't follow it.

I just put mine in the oven...and realized I didn't have eggs after I already started. Lesson learned on that one.

I used 2 lbs ground beef, onion soup mix, 2 pieces bread torn up, a little Worcestershire, diced onion, garlic, milk and pepper. I think that's all. Then I scooped them into a muffin tin.

I sprinkled some brown sugar on the top while it bakes.

OP here.

Thanks for all of your replies!!! Unfortunately I got home from work too late to cook meatloaf so it was French Toast instead.

But I'll make the meatloaf tomorrow night. I might try the "soaked bread" idea. Never did that. So I would use that instead of breadcrumbs, right?

If you make it in a muffin tin, it cooks in about 30 mins.

I mix with my hands and bake in a small bread pan. I once baked it in a normal loaf-size pan and it was too crumbly.

I have a vegan friend. I knew she was in love when she told me she'd put her hands into meat to mix up a meatloaf for her then-boyfriend (now husband.) has nothing to do with your question, but I always think of it when the subject of mixing meat with your hands comes up.
