As for Alaska, never cruised there but I have been to Juneau many times. In the summer, expect weather in the 60s. It could be down in the 50s in June. When it hits 70 there the locals are out in tank tops, shorts, and flip flops! Add to that the fact that you will be on a moving boat, which creates wind going by you if you're near a railing, which is going to cool you down. So yes, layers! But it's not usually, IMO, unbearably cold. November on the other hand, well, there is a reason no one has cruise ships going up there in the winter!

We cruised in November last year (right around veteran's day) and we loved it! The weather was great. Wasn't too hot or cold. We swam at Castaway Cay and Nassau without any problems at all. I would def. go in November again.
