8oz mascarpone cheese
8oz fat free cream cheese softened
1/2 cup confectioners sugar
3/4 cup frozen lite whipped topping, thawed
2/3 cup freshly brewed espresso or strong coffee
3 Tbs. coffee liqueue, such as Kahlua
1 loaf fat free sponge cake (about 13 oz)
1/2 tsp. unsweetened cocoa powder
in large bowl with electric mixer on low speed blend together mascarpone and cream cheese. blend in confectioners sugar. fold in whipped topping,set aside. in measuring cup, stir together espresso or coffee and coffee liqueur. using a bread knife or long serrated knife, cut cake horizontally into 8 slices. dont worry if slices break you can still use them. arrange half the cake slices on the bottom of a 10"x10"x2" pan. using a spoon drizzle half the coffee-liqueur mixture over cake. gently spoon half the cheese mixture evenly over cake layer. repeat with remaining cake slices, coffee-liqueur mixture and cheese mixture. sift cocoa over top layer of cheese. cover and chill at least 8 hours or overnight before serving.
